Recipe: Jollof Rice
Ingredients:
2 cups of long-grain rice
1 cup of tomato puree
2 fresh tomatoes, blended
1 onion, chopped
1/2 cup of vegetable or palm oil
2 teaspoons of curry powder
2 teaspoons of thyme
Salt and pepper to taste
Instructions:
Heat oil in a large pot and sauté onions until golden.
Add tomato puree and blended tomatoes, then season with curry, thyme, salt, and pepper. Simmer for 10 minutes.
Add water or stock, bring to a boil, and stir in the rice.
Cover and cook on low heat until the rice is tender and the liquid is absorbed (about 20-25 minutes).
Fluff the rice with a fork and serve with your favorite protein or vegetables.

If I wore it with ordinary shorts, you probably wouldnt be able to see the shorts at all – completely hidden by the shirt. It needs to be 4 to 5 inches shorter in terms of length to suit me. I have many RL polo shirts, and this one is by far the longest. I dont understand why.
